Thank you for the food processor idea. Since I got Arthritis in my right hand, I am unable to knead dough anymore. This is brilliant. I tried it, it works very well.
Eggs with very vibrantly orange, almost red, yolks are most nutritious and delicious. It means the chicken was fed a healthy free-range diet and dined on things like insects and small invertebrates along with vegetables and such. They are so good!

American eggs are a pale light and unhealthy looking yellow. But watch out, if corporate finds this opinion is rampant they may start inserting chemical coloring into the yolk.

I'm using this recipe and it's very good but it's only for 4 people if you are thinking in "fancy restaurant" portions and no one gets refill. I'm making always double for 4 people. (maybe perfect would be 1,5)

I couldn't get 00 flour, so used general purpose flour, which I sifted twice, and it all worked out really well. First time I've ever made pasta, and the difference between home-made and shop-bought is phenomenal. Well worth the small effort and very satisfying. You gotta love Gennaro!

I like to use: (1 egg per 100 gram 00 flour) + (1 extra egg yolk + olive oil). I don't add any salt, instead I boil it in "sea water".
