- 1 Medium Zucchini
- 2 Tablespoons Cream
- 2 Tablespoons Mascarpone or Cream Cheese
- 1 small tin tuna
- 2 Tablespoons Parmesan
- Wash and trim the ends from the zucchini and spiralize into noodles with your Spiralizer of Choice.
- Heat the cream and mascarpone in a large frying pan over medium/high heat.
- When bubbling add the spiralized zucchini and tuna.
- Heat through, add the parmesan, salt and pepper to taste and cook until creamy.
- Serve as is or topped with more parmesan.
